Summer is OFFICIALLY here, woohoo!

Our Favorite June Weeknight Dinner Recipes (1)

We don't know about you, but we’re not wasting a second of summer, so now that June's here, it's GO TIME. Now that Memorial Day is in the rearview, it’s time to kick summer into top gear! Join us as we try and stuff all our meals with fleeting summer produce (peaches! summer squash! sweet corn!) and eat ALL our meals outdoors. We’ve got 40 recipes to help inspire you to make dinner this June—one for every day of the month, and then some.

We’ve included a good mix of entirely new recipes here, like our spaghetti all'assassina, our grilled cod with romesco sauce, and our steak kebab bowls, as well as some older classics we’ve given a revamp to, like our chicken Florentine pasta, our copycat Big Macs, and our sheet-pan quesadillas. Craving lighter meals that won’t weigh you down? Try our blackberry chicken salad, our summer roll bowls, or our creamy corn pasta (the corn becomes the cream sauce 😵). Looking for heartier, family-friendly meals that’ll fuel your crowd? Try our creamy Cajun stuffed shells, our , or our air fryer meatloaf (for when you're craving comfort, but are dreading turning on your oven).

We’re also taking inspiration from holidays in June, and have included recipes that are synonymous with Father’s Day, as well as Pride month (in memory of the 1969 Stonewall Uprising that is known for sparking the modern gay rights movement). There’s no better time of year to include a rainbow of colorful veggies in your meals, like in our Caribbean Cobb salad, our sushi sandwiches, or our rainbow spaghetti—check out our gallery of rainbow foods for more inspiration too. Father’s Day is synonymous with grilling, sure, but we say, the best way to celebrate your dad is to spend time with him. Rather than just relying on standard burgers and dogs for one day only, try grilling more impressive recipes together all month long. Our grilled short ribs, our , our surf 'n' turf foil packs, or our Cajun butter steak are all fun to tackle, and are like gifts that keep on giving (turn leftover pineapple into piña coladas, short ribs into tacos, put Cajun butter onto ALL your grilled meats… you get the idea).

Sheet-Pan Quesadillas

Our Favorite June Weeknight Dinner Recipes (3)

Quesadillas are a classic late-night snack or easy dinner, but when we need to serve a crowd, we bring out the sheet pan. This hack makes cooking quesadillas for a crowd easier than ever. In just around an hour, you'll have a cheesy, crowd-pleasing meal that is sure to satisfy.

Grilled Cod With Romesco Sauce

Our Favorite June Weeknight Dinner Recipes (4)

We won't say no to grilled burgers or hot dogs, but we think grilled fish is a pretty unbeatable summertime dinner too. Our romesco yields a generous 1 1/2 cups sauce, enough to serve with the cod and still have leftovers to toss with grilled vegetables or spread on grilled chicken.

Spring Roll Bowls

Our Favorite June Weeknight Dinner Recipes (5)

Love a Vietnamese summer roll but don’t want to fuss with the wrapper? Meet your new favorite summer dinner. Rice noodles, shrimp, avocado, thinly sliced veggies, and a plethora of greens are tossed together in a tangy nước chấm dressing for a refreshing dinner twist.

Sushi Sandwich (Onigirazu)

Our Favorite June Weeknight Dinner Recipes (6)

Inspired by the popular Japanese onigirazu, this is like a cross between sushi and a sandwich. We filled ours with spicy salmon, seasoned sushi rice, cucumber, pickled cabbage, carrot, and avocado—then wrapped it in nori to make it extra portable. Serve it with plenty of the sriracha-soy mayo on the side!

Blackberry Chicken Salad

Our Favorite June Weeknight Dinner Recipes (7)

This summery salad has all of the best ingredients: well-seasoned chicken, creamy feta, a little crunch from toasted walnuts, and a burst of sweetness from juicy blackberries (both fresh AND in the dressing, thanks to a hack featuring blackberry jam).

Hawaiian Chicken Skewers

Our Favorite June Weeknight Dinner Recipes (8)

While we have plenty of favorite protein + veggie combinations, these Hawaiian chicken skewers just might be one of our favorites. With sweet pineapple, chicken, red bell peppers, and onion all basted in a sweet teriyaki-style sauce, these skewers are the ultimate summer dinner.

Spaghetti All'Assassina

Our Favorite June Weeknight Dinner Recipes (9)

This is like the OG one-pot pasta. The spaghetti is cooked in a spicy tomato broth in a style similar to risotto and charred in the pan as the broth gets absorbed. And when we say charred, we mean burnt. Trust us, the rich tomato, burned starch, and spicy mess of it all is absolutely delicious.

Get the Spaghetti All'Assassina recipe.

Creamy Cajun Stuffed Shells

Our Favorite June Weeknight Dinner Recipes (10)

Cajun chicken Alfredo is one of our top pasta dishes in the Delish Test Kitchen, but we might have to make space on our favorites list for these creamy Cajun stuffed shells, that feature a savory Cajun cream sauce and shells filled with andouille sausage and Cajun-seasoned chicken.

Steak Kebab Bowls

Our Favorite June Weeknight Dinner Recipes (11)

Nothing screams summer quite like rainbow veggie kebabs dotted with succulent cubes of marinated steak, charred to perfection over the grill. We complete this dish by resting the kebabs over a bed of crunchy spinach and cucumber salad tossed in a garlicky tahini dressing, plus a pile of herby orzo.

Cheesy Garlic Zucchini Steaks

Our Favorite June Weeknight Dinner Recipes (12)

Bunches of zucchini jamming up your crisper drawer? These cheesy garlic zucchini “steaks” are calling your name. Slathered with garlic oil and showered with mozzarella and parmesan, this showstopping vegetarian side might just upstage the actual steaks at the grill-out.

Dragon Roll

Our Favorite June Weeknight Dinner Recipes (13)

Uramaki arguably reaches a peak of extravagance with the dragon roll, with its gorgeous "scales" of thinly sliced mango and avocado and drizzle of spicy sriracha mayo. The roll is wrapped in classic vinegar-seasoned rice and filled with crispy shrimp tempura, a mix of buttery avocado, and crunchy cucumber.

Baked Pineapple Salmon

Our Favorite June Weeknight Dinner Recipes (14)

Giving the salmon a quick broil at the end of cooking lets the pineapple marinade caramelize. Make sure to keep a close eye on it—a couple minutes is all you need under a hot broiler. Looking for more salmon recipes? This Greek salmon is another foolproof, quick dinner.

Air Fryer Meatloaf

Our Favorite June Weeknight Dinner Recipes (15)

Your air fryer can turn out pretty much anything, including a great meatloaf. This one's pretty standard: You'll combine a pound of ground beef (or turkey, if that's what you prefer) with bread crumbs, onion, bell pepper, egg, and ketchup for a tender, weeknight meatloaf the whole family will love this June.

Lobster Rolls

Our Favorite June Weeknight Dinner Recipes (16)

While this recipe focuses on the all-butter version that makes lobster the star of the show, mayo fans need not fear—we've included both options, so you can make your dream lobster roll, just how you like it. Serve it with your favorite summer sides to transport yourself straight to the coast after just one bite.

Caprese Chicken Saltimbocca

Our Favorite June Weeknight Dinner Recipes (17)

Glance at the ingredient list for this Caprese chicken saltimbocca recipe, and it reads like an all-star roster of deliciousness—prosciutto and chicken? Present. Ciliegine (aka, tiny balls of mozzarella) and juicy cherry tomatoes? They're here too. Finally, the dynamic duo of basil leaves and balsamic vinegar enhance the Italian flavors. 😍

Chopped Sandwich

Our Favorite June Weeknight Dinner Recipes (18)

Imagine not having to unhinge your jaw like a snake to enjoy your favorite Italian deli hero. This chopped sandwich is here to turn that dream into a reality. Turns out, running a knife through your sandwich ingredients before piling them into a roll makes the whole ordeal of crushing a big hoagie a lot easier to manage!

Copycat Big Mac

Our Favorite June Weeknight Dinner Recipes (19)

With double patties, three buns, melty cheese and the iconic special sauce, it has all the components of a perfect burger. That's why we decided to try our hand at making it at home. Trust us—once you've made this iconic fast food dish at home, you may never go through the drive-thru again.

Surf 'N' Turf Foil Packs

Our Favorite June Weeknight Dinner Recipes (20)

Not sure about cook time? Feel free to take a peek! The shrimp should be pink and opaque and the steak—depending on how you like it—should be slightly pink in the very middle. Do open the packs carefully and slowly, exercising caution to avoid the steam trapped within!

Cajun Butter Steak

Our Favorite June Weeknight Dinner Recipes (21)

Grilled steak is pretty incredible all on its own, but if you're looking for a total flavor upgrade, turn to this homemade Cajun marinade and butter. A bourbon marinade flavors the steak, then while it's grilling, you'll make a homemade Cajun butter that goes perfectly on top of this steak (and honestly, any other grilled protein).
